How to defrost fish?
Ideally slowly overnight in the fridge — the fish keeps its juiciness and texture. In a hurry, cold water helps (in a sealed bag), never warm.
Why frozen fish?
Shock-freezing to −40 °C shortly after the catch preserves freshness better than days of “fresh” transport. That's why our fish tastes like it just came out of the water.
