Detailed information

Product detailed description

Caught by experienced fishermen in the cold waters of the North Pacific.

Wild Chum salmon is an excellent choice for everyone seeking the natural taste of truly wild fish. Compared to farmed salmon, Chum is leaner, has firmer flesh and a milder flavour, making it perfect for simple preparation in butter, grilling, or modern cuisine.

Chum salmon is characterised by lighter flesh than, for example, Sockeye, but offers a very clean flavour profile without excessive fattiness. It pairs perfectly with citrus fruits, herb butter, pepper, or simply high-quality salt and olive oil.

Wild vs. Farmed Salmon

Wild Sockeye salmon differs from farmed salmon primarily in its lifestyle and meat structure. Wild salmon is more active, has less fat, and its flavor is more intense and "fishy".
Farmed salmon (e.g., Icelandic) on the other hand has a finer texture, higher fat content, and very stable quality year-round, making it a great choice for everyday cooking. It's not a better or worse option – it's a different taste experience and a different style of cuisine.

Why choose Nerka:

  • wild-caught salmon from the North Pacific
  • firm flesh structure and mild flavour
  • ideal for the pan, grill or oven
  • naturally high protein and omega-3 fatty acid content

This variant will be appreciated by everyone who wants to taste salmon in its most natural form and is looking for a more distinct flavour profile than farmed variants.

Freezing is a completely gentle and safe way of preserving food when the correct technological procedure is followed. We do not add anything extra to the fish during the processing - no water or additives. The weight listed for each portion is therefore the actual weight of the meat. If the fish fillets are thawed properly, the taste and nutrient content are comparable to freshly caught fish.

We freeze differently

We freeze our fish to ensure you have meat at home with a quality almost indistinguishable from the moment it was caught. Fishing takes place on small fishing boats that go out to sea in the morning and return in the evening, which is why our fish is portioned, packaged and frozen within 24 hours of being caught. This avoids the depletion of marine ecosystems and the wasting of so-called "unwanted catches", as is the case with freezing on large floating factories that are at sea for days or weeks.

No added water

We don't need to artificially increase the weight of our products by adding water to the muscle of frozen fish. You can tell such fish at the first taste; as soon as the water is released during cooking, you are left with only tasteless meat.

One (and the only acceptable) form of water content in frozen food is a protective glaze. It is applied to the surface of the fish or seafood (typically prawns, for example) and protects the fish from freezer burn. This protective layer ranges between 5-20% and must always be stated in the product composition! Therefore, if the fish is not vacuum-packed, water in the form of a protective glaze is even desirable for preserving its quality.
