The premium chop with bone weighing 400 g comes from the Duroc pork breed from the Weinviertel region of Austria, famous not only for its wine but also for the exceptional quality of its meat. Duroc pigs are reared in a natural environment and fed on crushed corn and cereal mash, which gives their meat an exceptional juiciness, firm texture and a wonderful fatty texture.
The cutlet is dry-aged for a minimum of 21 days, which deepens the flavour, softens the texture and increases tenderness. Thanks to the leftover bone, it acquires an additional intensity and character when roasting or grilling, which will be appreciated by every lover of quality meat.
