This Rib Eye steak comes from the high rib, a part of the back known for its rich marbling, fine texture and distinct succulence. The meat is from Ayrshire heifer breed, which are raised in Finland in harmony with nature – freely on pastures rich in protein grass, far from civilisation.
However, the uniqueness of this steak is underlined by something quite extraordinary: for the last 3 months before slaughter, the animals are fed cocoa beans. This detail fundamentally affects not only the colour of the meat (it is slightly darker), but also its taste. The result is a delicate hint of chocolate aroma that every experienced gourmet will recognise.
The meat undergoes dry aging for 30–40 days, which gives it even greater tenderness, a complex flavour profile and irresistible succulence.
