Karrekrone from Duroc - Austrian pork with character
Karrekrone - or chop with belly and bone - is a unique cut that combines the best of pork. In our country, it is also dry-aged for a minimum of 21 days, which significantly deepens the flavour, softens the texture and increases the juiciness of the meat.
It comes from the Weinviertel wine region of Lower Austria, a region known not only for its excellent wine, cider and pumpkin seed oil, but also for its exceptional pig breeding. The local Duroc pigs are fed on crushed corn and cereal mash, which has a direct effect on the quality of the muscle and the beautiful fat marbling.
The meat is firm, succulent, full-flavoured and has a rich fatty texture that dissolves beautifully when cooked, giving the meat intensity and flavour. The ideal choice for slow roasting, grilling or poaching - a piece of Austrian craftsmanship on a plate.
Preparation tip:
Grill slowly with the bone, season only with salt, pepper and herb butter if necessary. Ideal with cabbage, pumpkin puree or just crusty bread.
