Pork Neck Roast from Duroc – Austrian Pork with Character
Pork Neck Roast – also known as a chop with bacon and bone – is a unique cut that combines the best of pork. Here, it is also dry-aged for at least 21 days, which significantly deepens the flavour, tenderizes the texture, and increases the juiciness of the meat.
It originates from the wine-growing region of Lower Austria – Weinviertel, a region known not only for its excellent wine, must, or pumpkin seed oil, but also for its exceptional pig farming. The local Duroc breed pigs are fed crushed corn and grain mash, which directly impacts the quality of the muscle and beautiful fat marbling.
The meat is firm, juicy, with a full flavour and rich fat structure, which beautifully melts during cooking, adding intensity and flair to the meat. Ideal choice for slow roasting, grilling or poaching – a piece of Austrian craftsmanship on a plate.
Preparation tip:
Grill slowly with the bone, season only with salt, pepper, and optionally herb butter. Ideal with cabbage, pumpkin puree, or just crispy bread.
