Domaine Louis Robin is run by two brothers - Thierry and Didier Robin. Together, they comprise the 8th generation of the Robin winemaking family. The family produces wines in the traditional Chablis style. This means that they work with the Chardonnay variety, which is fermented at around 18 to 20°C. This gives the wines their characteristic fresh minerality. Following the primary fermentation, malolactic fermentation takes place, giving the wines their characteristic creaminess and fullness; they are then finished with a year's maturation in stainless steel tanks.
