The borettana onion comes from the small town of Boretto in the province of Reggio Emilia. The bulbs have a unique sweet taste and a distinctive, flattened saucer shape.
Those marinated in balsamic vinegar from Modena are soft and have a velvety, delicate flavour. They can be added to warm dishes and, when cold, are suitable as an appetiser.
