Enologist and enthusiastic winemaker. This is Ondřej Havran, the owner of the eponymous winery from Mikulov, who has dedicated his professional life to the grapevine. And from all sides. Ondřej is an enologist, i.e. an expert in wine and winemaking. He practices his skills and knowledge as a consultant to winemakers. Based on the composition of the soil in their vineyards, he advises which wine variety is best suited to the area.
Ondřej Havran also has his own small vineyard, and he gets some of his grapes from neighbours whom he helped to build a vineyard. He thus has access to the best quality fruit, which he carefully selects. The result is always a great wine, made from quality grapes, well crafted and always super tasty. Ondrej's production is small and unique, so you won't normally find it in the shops.
