The halibut is the largest of a family of flatfish known as Pleuronectidae, or righteye flounders. It has soft aromatic flesh with a high protein content. Thanks to having a minimum of fat it is suitable for all kinds of cooking methods. The best, however, is to steam over stock and white wine or bake it in parchment.

Our halibut has a very delicate flesh and so it is frozen in a protective glaze which optimally preserves flavour and texture.
