Loin, the best piece of the whole cod. A thick fillet of tender white flesh which, being bone-free, will find favour especially with children. Having a delicate flavour and delivering high quantities of essential amino acids, and vitamins A and D, there is arguably no better single ingredient to build a balanced diet around.
Fish from Iceland is among the healthiest and tastiest in Europe. The surrounding cold waters are not contaminated with dangerous substances and the fish here have ideal conditions for their growth and development. The method of fishing is also essential for us. We work with certified producers who catch and process fish in a gentle and responsible way. Every morning they go out to sea, where they cast a long line with a hook, and return to the harbor in the afternoon. Here, the fish are almost immediately processed and shipped on their next journey.
Is fresh fish really fresh?
In our country, you can traditionally and safely buy fresh freshwater fish that do not need to be imported to us. You can buy them right on the day of the catch, or watch the catch from the vat directly on the street or in the store before Christmas. That way you know how much time has passed since the catch. For sea fish, the journey to us is a bit more complicated, it is often a struggle against time, which is often bypassed by freezing and thawing the raw material for sale.
At Boxxi, we understand quality fish and their journey, which is why you will find the date of catch on the label of our truly fresh cod. You are therefore sure that a quality product has reached your table, in addition to a carefully monitored temperature chain.
We recommend processing fresh fish within 24 hours of delivery. If you want to enjoy the pure taste of Icelandic cod, but don't have time to process it, order our deep-frozen portions. In Boxxi quality and without added water. Move it from the freezer to the refrigerator the day before (ideally in the evening). In the morning it will be as good as fresh.
