Fish from Iceland are among the healthiest and most flavoursome in Europe. The surrounding cold waters are uncontaminated with dangerous substances and the fish here have ideal conditions for their growth and development. Their flesh is firm, tasty, and full of nutrition. Arctic salmon from Iceland, for example, has up to twice the amount of omega-3 fatty acids as other breeds from different regions.
The quality of fish is influenced by the method of capture. We take pains to choose fishermen who catch traditionally, on a long line with a hook, returning the same day with their catch to the harbour. Once there, fish are immediately processed. As far as farmed fish are concerned, meanwhile, it is essential for us that natural conditions of breeding should be maintained as far as possible and that feed should not contain GMO, antibiotics, or growth hormones.

Our fish are processed almost immediately upon being caught. In most cases, they are processed by hand, sometimes with the use of the most modern technology, designed to minimise the impact of handling. Fish fillets are then frozen, vacuum-packed, and prepared for expedition. The first part of their journey is by boat, they then continue overland until they arrive at Boxxi House in Nusle.
With the right equipment and when the leading contemporary protocols are adhered to correctly, freezing is a safe and sparing method of preserving food. It's no secret that even first-rate head chefs work with frozen fish, even for the preparation of sushi, which has famously high demands on the freshness and quality of the produce. Boxxi uses the Individual Quick Freezing (IQF) method in which fresh fish is rapidly frozen at a temperature of -60°C. The quality, nutritional value, texture, and flavour are completely preserved.
During processing we do not add anything to the fish: neither water nor additives. The weight as listed on a given portion is the true weight of the fish. Following defrosting in the correct manner, the fish is, in terms of both flavour and nutrition, comparable to a freshly caught fish. The best way to persuade yourself is to order our Boxxi fish.
