The black halibut or Greenland halibut is an oilier fish than its more common "relative". For this reason its tender flesh is suited to the barbecue. Add the minimum of herbs to let its delicate aroma come to the fore.

Our halibut has a very delicate flesh and so it is frozen in a protective glaze which optimally preserves flavour and texture.
