Ground burger does not include tendons, cuttings or cartilage, but only cleaned beef neck. Matured min. 7 days. Slightly seasoned - only with salt and pepper. When preparing the mixture, there is added a little ice water to bring the meat together. Of course, there is also a balanced fat ratio so that the burger is not dried after grilling.

Animal welfare is not only moderm phrase here. In the open South Bohemian meadows, Marek Čunát & cooworkers cattle mainly beef of the breed Meat Simmental originating from Switzerland and Charolais, which is originating from France. The animals are fed exclusively on pasture and hay from local meadows, which are open to the animals all year round. The pastoral method of breeding guarantees that the animals live primarily outside, they have a space of several tens of hectares at their disposal, which has a positive effect on taste and fineness of structure. During the winter, they are fed hay from their own meadows, which is not chemically treated in any way.
